We like to search for culinary inspiration in the winter and we have found our favourite all time breakfast.

Doubles can be found in Trinidad and Tobago, often sold from the opened boot of a people carrier with a large queue, only in the morning.

Showing the strong Indian culinary influence on these Caribbean Islands doubles are essentially a fried 'puri' pancake with a chickpea curry. Each doubles seller has their own particular twist and this one has a fresh and sweet cucumber chutney. The red at one end is the pepper sauce, ask for it 'heavy' and your lips will be tingling for thirty minutes after.
