Dish of the summer - Hot smoked salmon, candy beets, fennel and horseradish

Its always interesting to see which dishes are chosen more frequently over the course of a summer. Last year the brown sugar merengue won the most popular dish by a mile closely followed by slow cooked lamb shoulder with harissa.

This years most frequent dish used more elements grown from our garden, which has been satisfying. The fennel, candy beets and horseradish we managed to supply ourselves but the Salmon came from the Severn and Wye Smokery and is highly recommended.
