Pickled alpine strawberries

Our alpine strawberries are cropping prodigously at the moment so to deal with the glut we have decided to stay away from jam which wastes the pretty small nuggets and decided to pickle them instead.

A simple pickling liqour of red wine vinegar, peppercorns, mustard seeds, coriander seeds and sugar is boiled up for ten mins cooled and poured over the washed strawbs.

We reckon they will be ready, in a wek or so, to combine with a peppery salad leaf and a salty goats cheese for a tasty salad.
